Shepherd's pie with Bryndza's sheep cheese / Pastiersky koláč s bryndzou /Pâté de berger avec fromage de mouton Bryndza / Пастуший пирог с овечьим сыром Бриндза

Original shepherd's pie comes from the UK around 1854 and is prepared from minced lamb and vegetables covered with a layer of baked crusty mashed potatoes. Potatoes are sometimes sprinkled with grated cheese. In our version, we have used pieces of chicken with vegetables in tomato sauce and with mashed potatoes flavored with eastern European sheep cheese, bryndza. Potatoes thus got a soft sheep cheese flavor and the chicken with tomato sauce tasted great. We baked shepherd's pie in both large and small dishes, where the little pies looked like a tasty crunchy soufflé.

Pôvodný pastiersky koláč pochádza z Veľkej Británie okolo roku 1854 a pripravuje sa z mletého jahniaceho mäsa so zeleninou na ktorom je pripečená vrstva zemiakovej kaše. Zemiaky sa niekedy posypú s postrúhaným syrom. V našej verzii sme použili kúsky kuracieho mäsa so zeleninou s paradajkovou pastou a zemiaky sme ochutili bryndzou. Zemiakové pyré tak dostalo jemnú bryndzovú príchuť a kuracina s paradajkovou omáčkou chutila výborne. Pastiersky koláč  sme piekli v zapekacej mise a aj v malých miskách, v ktorých pastiersky koláč vyzeral ako chutné chrumkavé suflé.

Chicken teriyaki / Kuracie teriyaki / Poulet teriyaki

This recipe using the Japanese sauce – sour-sweet teriyaki resembles the similar one, which I have made with tofu. In this recipe, I have just replaced tofu with the chicken and vegetable with the fruit – pineapple that fits well for the summer light diner.

Tento recept s japonskou omáčku - sladkokyslou teriyaki je podobný tofu teriyaki, ktorú som nedávno pripravila.  V tomto recepte som nahradila tofu s kuracím mäsom a zeleninou s ovocím - ananásom, ktorý sa hodí aj pre letnú ľahkú večeru.

Chicken lacquered with maple syrup/ Kurča lakované javorovým sirupom/ Poulet laqué à l´érable



I read this sweet recipe provided by the chef of Explorateurs culinaires,  in the Montreal newspaper "Metro". I have simplified it, but mostly, I used maple syrup, which added a delicious taste to the roasted chicken.
