Pumpkin cheesecake swirl brownies / Čokoládovo-tekvicové mramorové rezy / Brownies marbrés au fromage et à la citrouille / Мраморные тыквенные брауни

These pumpkin cheesecake brownies are seasonal, fudge, and moist with a rich taste of dark chocolate and pumpkin cream cheese. Initially, inspired by David Lebovitz and The Bojon Gourmet, we have changed the original recipes by using the regular flour partly replaced with gluten-free carob. To make a greater difference between two layers, chocolate brown and pumpkin yellow, curcuma was mixed in the pumpkin cream cheese to make it yellowish.   Then, the layers on the baking form were swirled few times, to get a marbled pattern for the cake. Little more effort, but the result is worth it. 

Tieto čokoládovo-tekvicové cheesecake rezy sú sezónne, krémovité a šťavnaté s bohatým množstvom horkej čokolády a tekvicovým smotanovým krémom. Pôvodne sme sa inšpirovali Davidom Lebovitzom a The Bojon Gourmet, v receptoch ktorých sme zmenili pôvodné zloženie s použitím bežnej múky čiastočne nahradenej bezlepkovým rohovníkom. Aby sa ukázal rozdiel medzi dvoma vrstvami, čokoládovo hnedou a tekvicovo žltou, kurkuma sa vmiešala do tekvicového krému pre získanie žltkastého nádychu. Vrstvy na plechu sa niekoľkokrát premiešali, aby sa získal mramorovaný vzor pre koláč. O niečo viac úsilia, ale výsledok stojí za to (recept je nižšie).

Stracciatella cake with raspberries / Stracciatella torta s malinami / Gâteau stracciatella aux framboises / Stracciatella торт с малиной

Stracciatella is renowned Italian gelato flavour consisting of ice-cream filled with irregular shavings of chocolate. The flavour was created in 1962, in Bergamo of northern Italy. Here, we have made no bake stracciatella cake with a creamy texture and shredded dark chocolate of the high quality made by Lindt. Instead of ice-cream, we have made a mixture of yogurt and milk curd with added shredded chocolate and solidified the all by gelatine. To make it fresh and colourful, raspberries were scattered over the curd/yogurt mixture. The top of cake was garnished with chocolate shavings and chocolate roses. When making this cake, not only dessert fitness lovers come into their own, but also those who like rich treats may be also delighted. Although we made the cake for birthday celebration, this chilled luxurious and elegant dessert could be perfectly refreshing also for hot summer.  

Stracciatella je známa talianska príchuť, ktorá sa skladá z bielej mliečnej zmrzliny zmiešanej s nepravidelnými kúskami čokolády. Vznikla v roku 1962, v Bergame v severnom Taliansku. My sme pripravili nepečenú tortu stracciatellu s krémovou textúrou a postrúhanej tmavej Lindt čokolády vysokej kvality. Zmrzlinu sme nahradili  krémovou zmesou z jogurtu a tvarohu s pridanou strúhanou čokoládou a všetko stuhnuté želatínou. Aby to bolo aj svieže a pestré, roztrúsili sme maliny do krémovej vrstvy.  Tortu sme ozdobili čokoládovými hoblinami a čokoládovými ružami. Pri príprave tejto pochúťky si prídu na svoje nielen milovníci fitnes dezertov, ale sa môžu potešiť aj tí, ktorí majú radi sýte sladké dobroty. Aj keď sme spravili túto tortu pre oslavu narodenín, toto luxusné a elegantné dielko môže dokonale osviežiť aj v horúcom letnom dni.

Nanaimo bars, no baked triple-layer dessert from Canada is named after the west coast city of Nanaimo, in British Columbia. It is popular across the North America and several varieties are known. In this fitness variation from our lab, the original ingredient, butter in the filling, was replaced with the mascarpone cheese and Greek plain fat-free yogurt, or partially with amazing coconut cold-pressed oil. The original custard powder was boiled into a thick pudding, and two cups of icing sugar in the original filling were reduced. Finally, mint leaves from our garden flavored the dessert with the fresh semi-sweet aroma (see the recipe below).

Nanaimo rezy, nepečený trojvrstvový dezert z Kanady je pomenovaný po meste na západnom pobreží, Nanaimo, v Britskej Kolumbii. Je populárny v celej Severnej Amerike a známe sú aj jeho variácie. V tejto fitness variácii z nášho labáku, pôvodné maslo v plnke sa nahradilo smotanovým mascarpone a s gréckym bielym jogurtom bez tuku, alebo čiastočne so zdravým za studena lisovaným kokosovým olejom. Z pôvodného pudingového prášku sa uvaril hustý puding, a dve šálky práškového cukru v pôvodnej plnke boli zredukované. A konečne, mätové listy z našej záhrady dali dezertu čerstvú polo-sladkú príchuť (pozri recept nižšie).

The original simple recipe found on Dobruchut.sk, I adapted to a Valentine's style. I was also inspired with recipes from Food Republic, using seeds for desserts. This cake has a high nutritional value made up of only the healthiest components found in poppy, nuts and flax seeds; anti-cancer fatty oleic acid, amino acid L-arginine beneficial for vascular diseases, the high content of calcium, and omega-3 fatty acids from flaxseed protecting the whole body.

Peanut Butter Cups with Seeds / Košíčky z arašidového masla so semiačkami


This is a healthy alternative to popular Reese's Peanut Butter Cups without compromising flavour. I was inspired by a recipe from Food Republic using superseeds with a simple procedure. Instead of chia and hemp seeds in the original recipe, I have added sunflower, pumpkin, flax seeds along with both dark and white chocolate. This takes only 15 minutes to make.

Baklava is a popular sweet, rich pastry very enjoyed with a cup of coffee. Due to its ingredients - walnuts, pistachios, almonds, honey, and oriental spices, which are sources of omega-3 fatty acids and antioxidants, baklava is beneficial for health mainly against the heart disease.

It is believed that Baklava came from the Middle East and Mediterranean region. There are many baklava recipes available, which vary with different regions. The following one, I have changed a little from the original recipe found at makinglifedelicious.

Baklava je populárne sladké a sýte pečivo, veľmi chutné so šálkou kávy. Vzhľadom k jeho zložkám - vlašské orechy, pistácie, mandle, med a orientálne korenia, ktoré sú zdrojom omega-3 mastných kyselín a antioxidantov, baklava je prospešná pre zdravie, najmä pri srdcovocievnych ochoreniach. Predpokladá sa, že baklava pochádza z Blízkeho východu a Stredomoria. Existuje mnoho receptov pre prípravu baklavy, ktoré sa líšia v rôznych oblastiach.
