Stracciatella cake with raspberries / Stracciatella torta s malinami / Gâteau stracciatella aux framboises / Stracciatella торт с малиной

Stracciatella is renowned Italian gelato flavour consisting of ice-cream filled with irregular shavings of chocolate. The flavour was created in 1962, in Bergamo of northern Italy. Here, we have made no bake stracciatella cake with a creamy texture and shredded dark chocolate of the high quality made by Lindt. Instead of ice-cream, we have made a mixture of yogurt and milk curd with added shredded chocolate and solidified the all by gelatine. To make it fresh and colourful, raspberries were scattered over the curd/yogurt mixture. The top of cake was garnished with chocolate shavings and chocolate roses. When making this cake, not only dessert fitness lovers come into their own, but also those who like rich treats may be also delighted. Although we made the cake for birthday celebration, this chilled luxurious and elegant dessert could be perfectly refreshing also for hot summer.  

Stracciatella je známa talianska príchuť, ktorá sa skladá z bielej mliečnej zmrzliny zmiešanej s nepravidelnými kúskami čokolády. Vznikla v roku 1962, v Bergame v severnom Taliansku. My sme pripravili nepečenú tortu stracciatellu s krémovou textúrou a postrúhanej tmavej Lindt čokolády vysokej kvality. Zmrzlinu sme nahradili  krémovou zmesou z jogurtu a tvarohu s pridanou strúhanou čokoládou a všetko stuhnuté želatínou. Aby to bolo aj svieže a pestré, roztrúsili sme maliny do krémovej vrstvy.  Tortu sme ozdobili čokoládovými hoblinami a čokoládovými ružami. Pri príprave tejto pochúťky si prídu na svoje nielen milovníci fitnes dezertov, ale sa môžu potešiť aj tí, ktorí majú radi sýte sladké dobroty. Aj keď sme spravili túto tortu pre oslavu narodenín, toto luxusné a elegantné dielko môže dokonale osviežiť aj v horúcom letnom dni.

"Driving home for Christmas" cake / Torta "Cestujúc domov na Vianoce" / Le gâteau "Conduisant à la maison pour Noël"

This unique Christmas decoration idea from magazine Woman &Home captured our heart because it is right for those (as we are) traveling home for Christmas every year from faraway places. So, we modeled a car from the fondant carrying a Christmas tree and driving through a snowy landscape just as in the famous song Driving home for Christmas by Chris Rea (listen to this beautiful song !). Under the snowy cake layer are ambrosia layers reinforced by super algae agar-agar. Ambrosia is known from the Greek mythology as the food of Gods. Such a cake can be a surprise after the Christmas dinner for loved ones, who have been waiting for us throughout the year on Christmas Eve.

Táto jedinečná vianočná idea z magazínu Woman & Home nás chytila za srdce, pretože to je presne pre tých (ako my), ktorí cestujú domov na Vianoce každý rok z ďalekých miest. A tak sme vymodelovali auto z fondánu nesúce vianočný stromček a uháňajúce cez zasneženú krajinu, presne tak ako v slávnom songu Driving home for Christmas od Chris Rea (vypočujte si túto krásnu pieseň). Pod zasneženou tortovou vrstvou sú uložené  vrstvy torty z ambrózie spevnené super riasou agar-agar. Ambrózia z gréckej mytológie je potrava bohov. Takáto torta môže byť aj prekvapením pre blízkych, ktorí na nás čakali celý rok na sviatočnú Vianočnú večeru. (Pozri recept nižšie.)

Unbaked gooseberry tart / Nepečená egrešová torta / Gâteau aux groseilles

Here's one inspiration for how to use gooseberries from the garden, fresh and straight picked up from bush. It may not be a lot of them, just enough for one good unbaked tart. The technology used preserves all vitamins of the fruit in a jelly from super healthy red seaweed agar-agar, which helps clean the body of accumulated toxins. Texture of the cake is shaped also by Chia seeds, a rich source of omega-3 fatty acids. This recipe is from our sweet laboratory (the recipe is below).

Tu je jedna inšpirácia ako využiť egreše zo záhrady, čerstvé a priamo naoberané z kríčka. Nemusí byť ich veľa, tak akurát pre jednu zdravú nepečenú tortičku, kde sú zachované všetky vitamíny z ovocia v želatíne zo super zdravej červenej riasy agar-agar, ktorá napomáha vyčistiť organizmus od nazbieraných toxínov. Textúru torty dotvárajú aj primiešané Chia semienka, ktoré sú bohatým zdrojom omega 3 mastných kyselín.  Tento recept je vyvinutý priamo v našom sladkom labáku (pozri nižšie recept).

Maková torta s vanilkovým krémom / Poppy cake with vanilla custard / Gâteau au pavot avec crème à la vanille

Pre nutričné a liečivé účinky maku, o ktorých som sa už zmienila, som hľadala vhodný recept na tortu. Inšpirovala som sa nakoniec  makovou tortou s vanilkovo-maslovým krémom z cookingchanneltv.com. Na ozdobu som spravila marcipánové makové kvety. Kúpený marcipán obsahuje sorbitol s nepriaznivými účinkami a preto je najlepšie použiť doma vyrobený marcipán.

Due to nutritional and healing properties of poppy seeds, which I have mentioned before, I was looking for a poppy cake recipe. I was finally inspired with a poppy cake with vanilla butter cream of cookingchanneltv.com. For garnishing, I made marzipan poppy flowers, however, purchased marzipan contained sorbitol sweetener with adverse health effects. Therefore, it is the best to use homemade marzipan, which is not difficult to prepare.

The original simple recipe found on Dobruchut.sk, I adapted to a Valentine's style. I was also inspired with recipes from Food Republic, using seeds for desserts. This cake has a high nutritional value made up of only the healthiest components found in poppy, nuts and flax seeds; anti-cancer fatty oleic acid, amino acid L-arginine beneficial for vascular diseases, the high content of calcium, and omega-3 fatty acids from flaxseed protecting the whole body.

Red currants cake with meringues/ Ríbezľový koláč s bezé





This recipe is from my mom, who makes this cake every summer when red currants are ripen in her garden. However, I have changed it a little: I replaced butter, white sugar and 4 eggs in dough for only 2 egg yolks, grapeseed oil instead of butter and cane sugar. Thus, the cake from such a dough is healthier and tastier.
