Sheep cheese and vegetable Napoleons / Napoleonky z bryndze a zeleniny / Napoléons de légume et fromage de brebis / Наполеоны из овечьего сыра и овощей

The Napoleon is a French pastry, whose exact origin is unknown. It is also called as the mille-feuille - thousand leaves, because it consists of several layers of puff pastry with the custard cream between. In this variant, we have used slices of vegetable and sheep cheese, a procedure originally found in magazine Saveur and several blogs.

Pôvodný Napoleon je francúzske pečivo, ktorého presný pôvod nie je známy. Volá sa aj ako mille-feuille – tisíc listov, pretože je spravený z niekoľkých vrstiev tukového lístkového cesta, medzi ktorými je pudingový krém. V tomto variante sa použili plátky zeleniny s ovčím syrom (bryndzou), ktorého pôvodný postup je v magazíne Saveur a niekoľkých blogoch

Fried patty pan squash with the herb dip / Vyprážaný patizón s bylinkovou omáčkou / Pâtisson frit avec la sauce aux herbes

If the garden harvest contains a lot of patty pan squash  and you cannot find a suitable recipe, the simplest is to fry the patty pan. Frying is not the healthiest procedure, but if temperature tolerance is properly kept, fried patty pan with healthy herb dip is indeed delicacy.

Ak sa v záhrade urodí veľa patizónov a neviete nájsť vhodný recept, najjednoduchšie je spraviť vyprážaný patizón. Vyprážanie nepatrí medzi najzdravšie úpravy, ale ak sa dodržia teplotné limity a vhodné suroviny, tak takýto patizón s bylinkovým dipom je zdravou lahôdkou .

BRYNDZA - Sheep cheese spread with chives and red pepper/ Nátierka z bryndze s pažitkou a červenou paprikou



Traditional sheep cheese - BRYNDZA - is a soft salted, fermented sheep cheese produced from raw, unpasteurized sheep's milk on sheep farms in the mountains or in bryndza-plants. It is prepared in Eastern Europe, especially in Slovakia, and its production dates back to the 18th century. Bryndza has medicinal properties, which have been clinically proven. It has about twice the amount of calcium than cow's milk, of a higher absorbency, and therefore, favorably influences osteoporosis.
