This exceptional and tasty Romanian cake we have found on the site Where is my spoon. It is made of whole apples flavoured with cinnamon, raisins and walnuts, poured with the caramel syrup. So, we have slightly changed the recipe; decreased calories, mainly cholesterol and added a flavour of Calvados to the syrup.  The cake was indeed special with large apples from our garden harvest, suitable for both fall and winter season.

Túto nezvyčajnú a chutnú tortu z Rumunska sme našli na stránke - Kde je moja lyžica/Where is my spoon. Pečie sa z celých jabĺk ochutených škoricou, hrozienkami a orechmi, poliatou karamelovým sirupom. Takže sme trochu recept zmenili; znížili kalórie, hlavne cholestero a pridali do karamelového sirupu chuť Kalvadosu. Koláč/torta bol naozaj výnimočný s veľkými jablkami z našej záhradnej úrody, vhodný ako pre jesennú tak pre zimnú sezónu.

This dessert is often considered a meal of leftovers, because it is made of unused bread rolls or buns, in a combination with apples, or other seasonal fruits. Despite the meal is economical, it has an excellent taste underlined by a flavor of spices. In America, this autumn dessert is popular and its history dates back to 1864, when the recipe was first published as the "brown Betty". Betty is an English pudding dessert, which is also associated with French Apple Charlotte. In our recipe, we have used dried rolls dipped in eggs whisked in the sweetened milk. Then layers of rolls were combined with apples, curd (cottage cheese), raisins, and spices. The top was garnished with the egg whites snow and baked until golden brown.

Tento dezert je často považovaný za jedlo zo zbytkov, pretože sa môžu použiť zoschnuté neupotrebené rožky alebo žemle, v kombinácii s jablkami, alebo iným sezónnym ovocím. Napriek tomu, že je ekonomickým dezertom, má vynikajúcu chuť ktorú znásobia ešte vône jabĺk a korenia. V Amerike tento jesenný dezert je populárny a jeho história sa datuje do roku 1864, kedy recept bol prvý krát publikovaný ako "brown Betty". Betty je anglický pudingový dezert a súvisí s francúzskym Apple Charlotte. V našom recepte sme použili vajíčka v osladenom mlieku do ktorých sme namáčali suché rožky a kombinovali s jablkami, tvarohom, hrozienkami a koreninami. Vrch sme ozdobili s bielym snehom z bielkov a cukru a nechali pripiecť do zlato hneda.

Carob Apple Cake / Karobový koláč s jablkami / Gâteau de caroube avec des pommes / Кэроб торт с яблоками /

Carob, naturally sweet powder, is an alternative to cocoa powder, however, with a different taste. In contrast to cocoa, it is free of the stimulants – caffeine, theobromine, and oxalic acid, which prevent the body from using calcium and zinc. It is also used to replace the flour in gluten-free diet. The carob tree is native mainly to the Mediterranean region. Carob was first used thousands of years ago and believed that John the Baptist sustained himself using carob beans, therefore, carob is also called St. John's bread. Carob has three times more calcium content than milk. Moreover, it contains proteins as well as vitamins A, B, B2, B3, and D. It is also high in phosphorus, potassium, magnesium and other elements. 
             In this recipe, we were inspired by a juicy and tasty carob cake from Macedonian Cuisine blog, where healthy ingredients are used including buckwheat flour and apples. As a garnish, we have made sweet apple chips, with which we decorated the cake along with mint leaves.

Karob, alebo rohovník, prirodzene sladký prášok, je alternatívou ku kakaovému prášku, avšak s odlišnou chuťou. Na rozdiel od kakaa, je bez stimulantov - kofeínu, teobromínu a kyseliny šťaveľovej, ktoré bránia telu využitie vápnika a zinku. Používa sa tiež ako náhrada múky pri bezlepkovej diéte. Karob  je pôvodom prevažne z oblasti Stredomoria. Bol prvýkrát použitý pred tisíc rokmi a verilo sa, že Ján Krstiteľ sám používal bôby z karobu, a preto je tiež známy ako svätojánsky chlieb. Karob má viac ako trikrát toľko vápnika ako mlieko. Okrem toho obsahuje bielkoviny, ako aj vitamíny A, B, B2, B3, a D. Má tiež vysoký obsah fosforu, draslíka, horčíka a ďalších prvkov. 
             V tomto recepte sme sa inšpirovali chutným a šťavnatým koláčom z karobu a jabĺk z blogu Macedonian Cuisine, kde sa použili zdravé prísady vrátane pohánkovej múky a jabĺk. Ako ozdobu sme spravili sladké jablkové čipsy, s ktorými sme ozdobili koláč spolu s mätovými lístkami.

Tieto veganské a vegetariánske guľky obsahujú veľa vitamínov, hlavne skupiny B a esenciálne mastné kyseliny, ktoré ľudské telo potrebuje pretože si ich nevie syntetizovať. Pri tomto recepte sme sa inšpirovali z blogu Macedonian Cuisine, kde sú recepty z Balkánu a Grécka.

These squares made from light grape seed oil and flavoured with roasted nuts on the cinnamon meringues is a good choice for an autumn or winter cup of coffee or tea. Moreover, the apple-walnuts filling with lemon gives the dessert some freshness and marble texture.

Tieto rezy s jemným cestom z hroznového oleja a príchuťou opražených orieškov so škoricovým snehovým bezé sú vhodnou voľbou na jesenné alebo zimné posedenie pri káve alebo čaji. Navyše jablkovo oriešková plnka s citrónom dodá dezertu sviežosť a mramorovú textúru.

Halva is one of the oldest oriental desserts, which is made in several variations. It can be prepared also with various fruits or other flavours. The following recipe is to prepare the autumn Halva from semolina flavoured with apple, cinnamon, raisins, and nuts. Semolina is milled from durum wheat having a lower glycemic index and higher nutritional value, which provides a higher amount of gluten. Semolina is, therefore, not suitable for a gluten free-diet.
Halva je jednou z najstarších orientálnych dezertov, ktorý sa pripravuje v niekoľkých variáciách. Môže sa pripraviť aj s rôznym ovocím alebo s inými príchuťami. Nasledujúci recept je na prípravu jesennej halvy zo semoliny ochutenej jablkami, škoricou, hrozienkami a orieškami. Semolina je pšeničná krupica zomletá z tvrdozrnej pšenice, ktorá má nižší glykemický index a vyššiu nutričnú hodnotu, ktoré zabezpečuje vyššie množstvo lepku. Semolina preto nie je vhodná pre bezlepkovú diétu.

Non-baked apple caramel cake / Nepečená jablková karamelová torta / Gâteau aux pommes et au caramel

This fresh non-baked cake from our lab is made of two apple layers flavored with caramel. Seaweed agar-agar solidifies the cake, provides a lot of minerals, and helps the body to get rid of toxins. Dark chocolate and apple roses make the cake irresistible, the apple brandy gives it an autumn flavor.

Táto svieža nepečená torta je spravená v dvoch vrstvách z jesenných jabĺk zo záhrady, ochutená karamelom a spevnená so želé z riasy agar-agar, ktorý dodá torte veľa minerálov a schopnosti zbaviť tela toxínov. Tmavá čokoláda a jablkové ružičky tortu spravia neodolateľnú a jablkové brandy jej dodá jesennú príchuť.

This tasty and quick seasonal recipe is from a Hungarian colleague. When we did brush it up after many years in order to harness the garden harvest, we were pleasantly surprised by what a simple and delicious recipe. The most prominent component is very healthy curry containing curcuma that flavours vegetable. It becomes thus savoury and full-bodied, which, along with side dish such as potatoes or crunchy toasts may serve as a major, but light summer meal.

Tento  chutný a rýchly sezónny recept je od známej z Maďarska. Keď sme ho po mnohých rokoch oprášili, aby sme zužitkovali záhradnú úrodu, boli sme milo prekvapení, aký je jednoduchý a výborný. Najvýraznejšou zložkou je veľmi zdravé karí, ktoré obsahuje kurkumu, dodávajúce zelenine pikantnú a plnú chuť, ktorá spolu s prílohou môže poslúžiť ako hlavné, ale ľahké letné jedlo.

Apple Strudel with Extra Virgin Olive Oil - Jablková štrúdľa

Apple strudel is usually prepared from the classic pastry with butter. However,  in some regions of Italy, where olive oil is widely used, the butter in puff pastry is replaced by olive oil. Here is my recipe of puff pastry with olive oil with or without egg. Taste of the strudel made of such pastry is similar to the classic one.
